How it's made

Coconut sugar is produced through a simple two-step process:

  1. Harvesting the Sap: Farmers make a cut on the flower bud stem of the coconut palm to collect the sap, also known as nectar, in bamboo containers.

  2. Evaporating the Sap: The collected sap is then heated in large woks to evaporate most of its water content, transforming it into a thick syrup. As it continues to cook, it caramelizes and solidifies into a brown, granulated sugar.

The final product resembles raw cane sugar but has a smaller, more variable particle size.
